I've heard from many people that punching to the head can injure your hand. But at the same time my instructor says there are areas you can punch, like the jaw, temple, nose, etc... Is that true? And if so, what are good punches to use on certain places?

aim for the chin. if u even tap urself in the chin with ur fist lightly, u will get an idea of the devastation a hard cross str8 to the chin can cause bareknuckled. the nose is very good too. i doubt u will really hurt ur hand punching someone in the nose since its cartilage.
as mike mentioned, dont aim for the cheek or upper head. alot of people throw punches to the cheecks or side of the face. this will prob get ur hand hurt, since ur slamming ur fist into hard cheek bones. thats kinda pointless. aim for the chin, or nose, or mouth. these will prob get u the best results when punching to the head. im talking about bareknuckle though , i dont know if ur tlakin about with gloves on. the thing is, u can always hurt ur hand punching someone, but if u punhc someone correctly, this risk is minimized, and if u do hurt ur hand one somenes face, immage how much u have hurt them. just dont aim for pointless targets, like hard bones like the cheek bones, or forehead. a person could possibly take alot of these. make ur shots count and make them devastating.
i personally like the mouth. u prob have a bigger chance of hurting ur hand cause of the opponents teeth, but a hard shot in the mouth is very discouraging for an attacker, especially if his teeth break or his mouth fills with blood.

It's just as easy to use open hand strikes instead of punches. Thus no risk of major injury to your hand.
And for God sakes don't hit to the mouth. The human bite is one of the worst and you risk not only getting tore up, but infection and even losing your damn hand.
A good place to hit is where the corners of the mouth end straight down to the spot on the chin.
Hitting a nose sideways does much more damage and pain, you can spin it around a bit on their face if you do it right.
A palm strike to the nose is a good shot as well.

Its best not to punch fpr the reasons above. Even open handed blows are not 100% injury free, but you'll have a better chance of still being able to do up your zip......
But you have to train for these open handed blos. Don't just think you'll be able to do them automatically when you need them.
