It's called 'The Way of the Warrior' (with a sort of sub-title 'The Paradox of the Martial Arts'.) It was published by the BBC. It came out a long time ago, so I don't know if it is still in print. (I got it from a second-hand book shop about eleven or twelve years ago!)

If you do manage to find a copy then I'd recommend it.
