I was going to ask you the same thing...
It's disconcerting that you can't find a good knife fighting school IN the Philipines (unless teachers there are more carfeul to give that knowledge away than in the US).
Wasn't the Sayoc family from Imus, Cavite? (It was in one of Mark Wiley's books) Do they still have family there (and most importantly, are they teaching?)

You won't find a "knife fighting school" per say. You can find traditional arnis/eskrima groups that teach knife as a sub-system. However, you can always look up instructors and see if they are willing to teach you strictly knife use & defense. Guys like Tuhon Leo Gaje and nephew Rommel Tortal are easy to contact even Samuel Ibe of Mantas-Daga has a site, I believe. Maestro Tony Diego of Ilustrisimo as well as Maestro Yuli Romo are also a very good source for edge weapons.

You should know by living there that knife encounters rarely come from a practitioner of a school. Knife use is simple...you piss someone off, you turn your back and they stab you whether then or sometime down the road. Ask the Manongs in your province or anyone you may know who has experienced it and see how much training was involved.

Tatang Bo Sayoc has retired to Cavite, so is no longer teaching full time. The Sayocs come to the Philippines all the time but at this moment have not established any new schools.
