Of course, the amount of empty hands varies from system to system in FMA. Some don't have much. Some have more. Some draw from other arts for their empty hand - including boxing, Thai, etc.
And there are even some FMA systems like Yaw Yan that specialize in empty hands - Yaw Yan is often compared to Muay Thai though I've heard from people familiar with both that there are definite differences there are also quite a few similarities.

I live and swear by FMA. it is so versitile you can't even grasp the idea until you experience it. it is also, in my opinion, the best art to cross-train in. It works hand-in-hand with BJJ, MT, Boxing, JKD, Shooto, etc. It is also probably the most deadly art out there, assuming you don't fight with real blades. and i am well aware that MT guys, or BJJ guys will argue this with me, but the way i train it incorporates MT, BJJ, JKD and other arts to get the most out of it. also with competetive fighting it doesn't get more well-rounded than that. it uses legs, arms, head, weapons, grappling and all that sweet stuff. i love it and always will.

I love them as well! I found a rattan stick on my balcony when I moved into my place in Chiang Mai. That made me very very happy.
Oh and I love how easily you can sneak in elbow destructions(among other things) in MT.
