Pushing out of it and starting over striking is a fine MMA strategy...
For grappling, your gonna need a good gaurd game unless you have Amazing standup (grappling).
With that said you said this:

A triangle attempt is more likely to get you stacked and passed I would think, they simply need to pull their head out when your trying to lock your legs... easier said than done, but if they have a bit of foresight... I guess its personal preference.
With the armlocks from gaurd, one of my favorite techniques BTW, it shouldnt be too risky as you should have them so fucked up (off balance, arms caught, head pushed back), by the time your ready to throw your leg over... it shouldnt be that big of a risk....
I'm not sure, also sweeps, speaking from a MMA perspective they can be hard to get but in grappling they are invaluable and are often neglected by less skilled people...
You said you do BJJ, so play the top of the gaurd for one class, see how many times the whitebelts ATTEMPT sweeps (they may not get them off), and see how many times you get swept by purples.
