I suggest figure-four should be on the list because it can be applied from almost any position with only slight variations.

The knee bar should be included, because it comes up so often in the course of a roll - if you don't know it, you'll miss a lot of opportunities and get caught.
The third is harder - either the armbar or the guillotine. Both come up often enough... Somebody please argue with me, I'm trying to help a fellow member get started.
