I have my favorite targets. Obviously the seven little bones in the neck are up there on the list along with other vital systems in that general location.
Knee destructions are good. A decent throw will FINISH some guys but a favorite of three would have to be a choke.

Change levels like you are moving down in the lock up, but come up instead, come down again (your opponent thinks its a passive move) and you pop up his elbow with the palm of your hand, shoot in under his elbow coming up just behind his armpit. Your inside arm is in position to wrap around the neck and your free hand can squeeze and secure the choke.

If they are on top grabbing your collar (easier to visualize in gi). with their right hand. You need to put your right hand under their arm and grab the wrist. Then weave your left arm through and grab your own hand, then you can sweep with relative ease.
Or a much simpler version if you have no idea what I'm talking about (really poor description on my part), take a americana from mount, and roll to gaurd, you can keep the grip and see how you can get it from gaurd.
