when Im boxing I tend to position them near the base of the throat, gives me a good veiw of the shoulders making it easier to see whats coming next.
If Im sparring with some of my other martial art mates (using kicks punches grappling etc etc) then I'll lower my veiw to the solar plexus area just above it really this give's me a good picture of his whole body making it easier to see the lower and upper body.
Obviously when Im boxing I dont have to worry about kicks so my point of veiw is raised more to focus more on the arms sholders etc.
The main thing is, you want to position your eyes in the position that give's you a whole veiw of your opponent therby giving you a wider veiw to perceive an attack from either limb asap, so obviously you'd want to look round the centre of the chest area as I assume your talking about kicks being a possibility as well?, but the other key detail is to look through the oppenent, by that I mean you dont want to focus entirely on the centre of the chest because you'll only centre your veiw and wont be able to perseve the rest of the body; make your veiw as wide as possible.
Its hard to explain really haha how I think of it though is look at them but try focus on the background behind them without moving your eyes off the centre of their chest, you'll them notice that you can see the whole body.
anyway, thats my way of doing it, let me know how it goes for ya

I've heard it said that should look at the hands. If you can't see the palms then there's a good chance they're concealing a weapon.
