How come muay thai and boxing for example teach combinations over techniques. Any seminar I've ever been to or video I've ever watched mainly teaches combinations rather than pacific techniques. Any thoughts on this ?

That's the distance you'd have to move your pinky in order to not sound like an idiot. I know the burden of pressing shift to capitalize is a great one, but c'mon, you can do better than that. I used to type emails in caps like yours, but then I decided that I didn't want a job mixing concrete.

When you attend a seminar, its usually assumed that most people in attendance have some training and know the basic techniques. And with the price of these seminars, people aren't going to attend too many where you spend much time teaching them how to throw a Jab.

A Chai's seminar combination tend to demonstrate concepts as much as techniques. The basic four count for instance goes:
left kick
right cross
left hook (or slap)
right kick
In this little set, you have to switch kick, recover for the cross, change range for the hook, and change range again for the last kick (or alter your kick technique). The idea, as I understand it, is not to teach you a good combo, but to force you to become aware of those ranges and how to adjust your body from one move to the next.
Longer combinations in Chai seminars move from punching, to clinch, and back to kick range. They also demand blocks, parries and counters for different attacks.
If you break the combo down, I think you'll see there are a lot of different techniques which you could drill in regular classes on your own.
